This is it. THE ICE CREAM DESSERT! The one that I get asked to make repeatedly by family and friends. And the secret that they don't know is that it's only a handful of ingredients, and can be made a day or two in advance and still tastes AMAZING! Layers of crispiness, vanilla ice cream, and a slightly tart raspberry topping, makes this dessert a mouthwatering, crowd pleasing specialty. Another great thing, it can be made gluten free, my friends!
This is a vintage recipe that my family has been making for years, and I always come back to it whenever I am in a time crunch and want to impress. Your family will love this one and the best part, is it is Quick, EASY, and can be made in advance! Think of all the extra time you will have to actually enjoy being with your family and friends.
It starts with simple ingredients 6 simple ingredients:
- Vanilla Ice Cream
- Brown Sugar
- Pecans
- Rice Krispies
- Butter
- Coconut
Start by Melting butter and combining it with brown sugar
Once combined mix in rice krispies. sweetened coconut and chopped pecans
Combine and layer half of the mixture in the bottom of a 9"x13" pan. Next take a knife and stick it directly into the ice cream container and slice the ice cream into sections. Layer those sections on top of rice krispie mixture.
Once layered smooth ice cream together using the back of a spoon or a knife.
Next Layer on the last of the rice krispy mixture and freeze until ready to serve.
When you are ready to serve make the Raspberry Topping following the instructions for fruit sauce on a package of Danish Dessert. We LOVE Danish Dessert. It is simple and is a great shortcut to making Danish style fruit sauce and compliments this sweet ice cream dessert with a tartness that makes mouths water. Literally!
Danish Dessert can be found in the baking/jello section of your local grocery store. I have heard that it is unavailable in some areas. If you are having trouble finding it, we have also used this recipe and it is a pretty great substitute. Just one recommendation we don't let ours thicken quite so long so that the sauce is still smooth and pourable, not chunky. For fruit we add and an entire bag of frozen raspberries.
When you are ready to serve, remove from the freezer, cut into individual slices and top with sauce and fresh raspberries as a garnish. ENJOY!
Raspberry Ice Cream Dessert
- 1/2 gallon of vanilla ice cream
- 1 sq butter
- 1 c. brown sugar
- 2 c. rice krispies
- 1 c. sweetened shredded coconut
- 1 c. chopped pecans
Add sugar to melted butter. Mix in rice krispies, coconuts and nuts. Pat 3/4 mixture in the bottom of the 9x13 pan. Slice ice cream and place over mixture, spread ice cream and smooth. Sprinkle the rest of the rice krispie mixture on the top and refreeze. Cut into 15 pieces and serve with raspberry topping.

1 pkg raspberry Danish Desert Mix - Cook as directed and add 1 pkg of raspberries or this recipe
